Healthy Recipes from Peter's Principles
Scottish Oats (Serves 4)Breakfast oats

Ingredients
1-1/2 cups Scottish steel cut oats
pinch of kosher salt
Possible Garnish:
dried fruit (raisins, cherries, Ccranberries,
    blueberries, dates, apricots)
chopped toasted nuts (Pecans,
    almonds, walnuts)
fresh fFruit
maple syrup
skim milk or lowfat soy milk

  1. Bring 4-1/2 cups of water to a simmer. Stir in the oats and a pinch of salt.
  2. Reduce the heat, cover and simmer on low for about ten minutes.
