Quick Tomato Herb Pasta
Ingredients:
1 pound dried pasta
1 28 oz can diced tomatoes
1 tablespoon extra virgin olive oil
1 tablespoon sea salt
2 tablespoons fresh Italian parsley, minced fine
2 tablespoons fresh basil, minced fine
1/2 bay leaf, chopped very fine
2 large cloves garlic, minced
Preparation:
- Preheat charcoal grill or broiler.
- IIn a medium saucepan, heat tomatoes to a simmer. Cook the pasta in plenty of boiling, salted water until just al dente. Drain and toss with the olive oil.
- Meanwhile, chop all the herbs and the garlic together till thoroughly mixed. Add the herbs to the tomatoes and simmer for 3-4 minutes.
- Serve the pasta with the sauce and a garnish of freshly grated Parmesan, if desired.
