Healthy Recipes from Peter's Principles
Quick Tomato Herb Pasta

Ingredients:

1 pound dried pasta
1 28 oz can diced tomatoes
1 tablespoon extra virgin olive oil
1 tablespoon sea salt
2 tablespoons fresh Italian parsley, minced fine
2 tablespoons fresh basil, minced fine
1/2 bay leaf, chopped very fine
2 large cloves garlic, minced

Preparation:

  1. Preheat charcoal grill or broiler.
  2. IIn a medium saucepan, heat tomatoes to a simmer. Cook the pasta in plenty of boiling, salted water until just al dente. Drain and toss with the olive oil.
  3. Meanwhile, chop all the herbs and the garlic together till thoroughly mixed. Add the herbs to the tomatoes and simmer for 3-4 minutes.
  4. Serve the pasta with the sauce and a garnish of freshly grated Parmesan, if desired.
