Healthy Recipes from Peter's Principles
Mashed Balsamic Sweet Potatoes

Ingredients:

3 pounds sweet potatoes
3 tablespoons balsamic vinegar
1/2 teaspoon ground cinnamon
1/3 cup nonfat sour cream
Salt, to taste

Preparation:

  1. Preheat oven to 425
  2. Prick skin of potatoes in several places with a fork.
  3. Bake on a baking sheet for about one hour or until very tender. When cool enough to handle, remove skins and blend potatoes, vinegar and cinnamon in a food processor until smooth.
  4. Transfer your mixture to a bowl. Stir in the sour cream. Season with salt and pepper. Serve with a sprinkle of cinnamon.

Yields 6 servings.
