Healthy Recipes from Peter's Principles
Low Fat Apple Pie

Ingredients: for Oatmeal Cookie Crust
2 2/3 cups white or oat flour
1 cup maple or natural cane sugar
1 cup apple juice
1 cup rolled oats
1 teaspoon cinnamon
1 teaspoon baking soda
3/4-to-1 cup unsweetened apple sauce
1 egg white
1 1/2 teaspoons vanilla extract
canola oil cooking spray
 
Ingredients for Apple Filling
6-8 large, tart apples (about 11 cups sliced)
3/4 cup maple or natural cane sugar
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 tablespoon cornstarch

Preparation for Crust:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine flour, sugar, oats cinnamon and baking soda.
  3. In another bowl, combine applesauce, egg white and vanilla. Stir to mix.
  4. Combine wet ingredients with dry ingredients and stir until well blended. If mixture seems too dry to roll out add up to 1/2 cup more applesauce.
  5. Spray a 9" pie pan with cooking spray.
  6. Roll out half the oat mixture on a lightly floured surface to make a 12" circle. If necessary, press the dough into the pan with your fingers to get it into position. Reserve the remaining mixture for the top of the pie.
  7. Bake in preheated oven for 10 minutes. Remove from oven and fill.

Preparation for Apple Filling:

  1. Peel and core apples and cut into 1/8" slices.
  2. Place apples, sugar, 1/2 cup apple juice, cinnamon and vanilla in a saucepan and cook over medium heat until apples are tender, about 5-to-10 minutes.
  3. Dissolve cornstarch in remaining apple juice. Add to hot apple mixture, stirring constantly, until mixture thickens about 4 minutes. Remove from heat.
  4. Place apple mixture in baked crust
  5. Turn out remaining crust dough onto lightly flour surface. Roll into an 11" circle. Pierce with a fork.
  6. Cover filling with top crust. Fold top edge under and crimp. Set pie pan on alarger pan to catch drips.
  7. Bake until top crust is firm, about 15 to 20 minutes

Yield: One 9" Pie, 10 slices.
