Healthy Recipes from Peter's Principles
Jicama Tuna Salad

Ingredients:

1 6-oz can long line solid Albacore tuna, in water
1/4 cup jicama, peeled and diced small
1/4 cup Daikon radish, diced small
1/4 cup scallions, sliced thinly
1/4 cup cucumber, peeled, seeded and diced
1 tablespoons fresh cilantro, chopped
2 tablespoons Dijon mustard
2 tablespoons non-fat, plain yogurt
Juice of 1/2 lime

Preparation:

  1. Rinse and drain tuna. Break into a mixing bowl and add the next five ingredients.
  2. Remove and wash 8-10 large leaves from the romaine lettuce or use other green lettuce leaves.

Note:Use sole, flounder, or red snapper for this recipe. You will need 2 fillets of 3/4 pound each, and about 3/4-inch thick.
