Healthy Recipes from Peter's Principles
Grilled Chicken Breast Salad

Ingredients:

4 4 oz. chicken breasts, skinned and boned
1 tablespoon ground cumin
1 teaspoon paprika
1 pinch salt
1 pinch cayenne pepper
1 pinch ground black pepper
6 cups gourmet salad greens
3 tablespoons white wine vinegar
2 tablespoons orange marmalade
2 tablespoons soy sauce
1 teaspoon dark sesame oil
4 wedges lemon
Cooking spray

Preparation:

  1. Rinse and dry chicken breasts. Combine second through sixth ingredient in a 1-gallon capacity resealable plastic bag. Add chicken to bag. Seal and shake to coat.
  2. Add both chili sauces and sesame seeds. Cook until chicken is cooked through, about one minute. Remove from heat.
  3. Prepare grill or broiler. Place chicken on grill or broiler pan, lightly coated with cooking spray. Cook 3 -5 minutes on each side or until chicken is done.
  4. Place greens in large bowl. Combine vinegar, oil, soy sauce and marmalade. Blend thoroughly. Pour over greens and toss well to coat. Slice chicken breasts across the grain into thin slices. Arrange chicken on top of each plate of salad greens and garnish with lemon wedges.
