Healthy Recipes from Peter's Principles
Fried Plantains

Ingredients:

4 ripe plantains, black and yellow in color
4 tbs. flour
1/8 tsp. ground black pepper
6 tbs. olive oil
2 tbs. honey

Preparation:

  1. Peel skin from plantains and slice diagonally into 1/2" slices. Place flour and pepper into a plastic bag, add sliced plantains and shake to coat thoroughly. When pan is hot, add oil.
  2. Shake off excess flour from slices and fry for about 5 minutes per side or until golden brown in color. Remove plantains from pan and drain on paper towels to remove excess oil.
  3. Remove frying oil from pan and wipe it clean. Flatten plantain slices slightly with a spatula. Return the pan to medium low heat and reheat the plantains briefly before serving. Drizzle with honey and serve.
