Fried Plantains
Ingredients:
4 ripe plantains, black and yellow in color
4 tbs. flour
1/8 tsp. ground black pepper
6 tbs. olive oil
2 tbs. honey
Preparation:
- Peel skin from plantains and slice diagonally into 1/2" slices. Place flour and pepper into a plastic bag, add sliced plantains and shake to coat thoroughly. When pan is hot, add oil.
- Shake off excess flour from slices and fry for about 5 minutes per side or until golden brown in color. Remove plantains from pan and drain on paper towels to remove excess oil.
- Remove frying oil from pan and wipe it clean. Flatten plantain slices slightly with a spatula. Return the pan to medium low heat and reheat the plantains briefly before serving. Drizzle with honey and serve.
