Healthy Recipes from Peter's Principles
Broiled Tofu & Veggies

Ingredients:

2 lbs firm tofu, cut into 1 inch cubes
2 medium yellow squash, halved lengthwise and cut into 2 inch pieces
2 medium zucchini, halved lengthwise and cut into 2 inch pieces
2 medium red bell pepper, seeded and cut into eights
2 medium onion, cut into eights
 
Sauce:
3 cups crushed tomatoes
3 tbs dark brown sugar, firmly packed
4 tsp Mango chutney
4 cloves garlic
1 tsp ground ginger
1 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice

Preparation:

  1. Combine all sauce ingredients in food processor and puree until smooth.
  2. Transfer to a large bowl. Add tofu and vegetables to sauce; toss to combine.
  3. Transfer mixture to broiler pan. Broil 6 inches from heat until vegetables are cooked through and sauce is lightly browned.
  4. Mixture will need to be turned halfway through broiling.
