Broccoli with Olives, Peppers and Feta
Ingredients:
2 cups broccoli florets
2 tsp olive oil
1 clove garlic, thinly sliced
6 Kalamata olives, pitted and chopped
1/3 cup roasted red peppers, diced
1 tbs fresh parsley, finely chopped
2 tsp fresh marjoram, finely chopped
1 ounce feta cheese, crumbled
salt and pepper to taste
Preparation:
- Steam the broccoli until tender, but still crisp, approximately three minutes.
- Heat oil and garlic in a large, non-stick skillet over medium heat. Remove garlic after it has browned and add the steamed broccoli, olives, peppers, parsley, and marjoram.
- Combine well and heat through. To serve, scatter cheese over the top, season with salt and pepper and garnish with lemon wedge.
