Peter's Principles - Recipes
Arroz con Pollo
(serves 4)

Ingredients:

1/4 cup olive oil
1 lb. boneless chicken breast
1 cup medium diced onions
2 cloves garlic, sliced
1 28 oz. can whole tomatoes, drained
2 tbs. chopped parsley
1 cup white rice, uncooked
2 cups chicken broth
1 tsp. paprika
3 scallions

Preparation:

  1. Cut the chicken breast into 8 pieces. Pat the chicken dry with paper towels. Preheat a large nonstick skillet over medium high heat. Add the olive oil. When the oil is hot, add the chicken to the pan.
  2. Cook for 5 minutes over medium high heat, then turn the chicken. Add the onions, garlic, tomatoes and parsley. Cook for an additional 5 minutes. Pour the white rice evenly over the chicken. Add the chicken broth to the skillet, season with paprika.
  3. When the liquid comes to a boil, cover the skillet and lower heat to a simmer for 20 to 25 minutes. Sprinkle with sliced scallions and serve immediately.
