Angel Hair Pasta with Peas and Tomatoes

Ingredients:

1 lb. angel hair pasta, cooked according to package directions.
1 C. fresh peas, cooked
2 Tbls. olive oil
2 Tbls. minced garlic
5 sun-dried tomatoes in olive oil, chopped
6 Roma tomatoes
1 16oz. can chickpeas, rinsed and drained
Salt and pepper to taste
Juice from 1/2 lemon
2 Tbls. fresh parsley, chopped

Preparation:

  1. Cook pasta and set aside.
  2. Cook peas and set aside.
  3. Saute garlic until just translucent. Add sun dried tomatoes and saute for another 3 minutes.
  4. Add chickpeas, tomatoes and peas and saute until just warm. Add pasta and lemon juice and toss. Keep mixture in pan until warm, top with parsley and serve.
